Seitan Filet „Al Limone“

My friend Gerhard sent me this recipe, which makes a nice Sunday lunch or dinner. The lemony sauce goes excellent with plain rice or toasted white bread.
Ingredients
For 4 Persons:
- 1 large chunk of seitan (400g)
- 1 lemon, unwaxed
- 1 tablespoon sage, finely chopped
- 1 tablespoon parsley, finely chopped
- 1 clove of garlic, peeled
- 1 1/2 cups (375 ml) vegetable soup
- Shoyu / Soy Sauce
- Whole meal flour
- Olive oil
- Sea Salt, Pepper
Instructions
Slice the seitan into 3-5mm slices (escalopes) and coat them in wholemeal flour. Heat plenty of olive oil in a large frying pan together with sage and the whole peeled garlic clove. Remove the garlic and fry the seitan pieces for 20-30 seconds on each side until slightly brown.
After removing the seitan, add soup and the juice and zest of half the lemon. Season with salt & pepper and let simmer for 5 minutes until the sauce thickens. Add the juice of the remaining half lemon and some soy sauce. Add the fried fillets to the sauce to heat up, and serve with a sprinkle of chopped parsley.
Serve with rice or toasted french white bread, and a nice glass of white wine.
